Wet Ingredients
  • 1 cup pumpkin puree Canned puree is recommended for best results.
  • 1/2 cup maple syrup Adjust quantity for sweetness preference.
  • 1/3 cup vegetable oil
  • 2 pieces eggs
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour for a healthier twist.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon chai spice blend
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pumpkin puree, maple syrup, vegetable oil, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and chai spice blend.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This bread can be served warm or at room temperature. It can also be wrapped nicely for a lovely gift. Store in an airtight container at room temperature for 3-4 days, or freeze for up to 3 months.
