Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the pumpkin puree, maple syrup, vegetable oil, and eggs until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and chai spice blend.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
This bread can be served warm or at room temperature. It can also be wrapped nicely for a lovely gift. Store in an airtight container at room temperature for 3-4 days, or freeze for up to 3 months.
